The powerful complexity of Iberico ham can be enjoyed in this special collection pack of the finest samples of three different vintages, to taste alongside one another. Iberico is a very ancient breed of Spanish pig, but it wasn’t until the middle of the 19th century that it started to be sold outside the local area.

It would be more accurate to say that the pigs are sacrificed than slaughtered – because they’re so incredibly precious to us. They live in complete freedom for their whole lives, wandering around our huge open land. We keep an eye on them, but they have freedom to move wherever they want.

From Ricardo Sanchez, the fourth generation of this family of iberico artisans, who is gradually taking over the reigns from his father.

In the dehesa fields north of Seville, Arturo Sánchez’ pigs roam free for two montanera seasons (the time of year when they feast solely on acorns), making a huge difference to the flavour of the meat. It’s aged for over four years – a true labour of love that can’t be rushed. The hand-sliced product is naturally gluten free and lactose, one of the finest examples of Iberico we’ve ever tried.

The best drinks pairing for ham are white wines – sherry is stunning, perhaps a Manzanilla or Fino, and also Champagne, because it cleans the palate and removes the oiliness. Fresh sake can balance the flavors and clean the pallet very well too.
